Quick Swirl: Aresti “Reserve” Cabernet Sauvignon 2000 Rio Claro (PB)

This Chilean Cab. Has a fragrant bouquet of fruit and a little yeast. In the mouth it sits well with firm tannins though it is a bit hot. The flavors seem locked up and trying to break out. If I’m right, breathing will open this up allowing the flavors to emerge. With a half hour or so of air time, the bouquet is opening revealing strawberry hints and the trademark green pepper aromas of Cabernet. Another half hour and this is full bore, wide open with some real nice flavors and big on fruits and berries and a freshness not found in other wines. At $11 this is yet another Chilean success. Nice! But don’t take my word for it; raise a glass and check it out.
